From warehouse to world-class facility: Haskell meets United’s daily demand for thousands of meals.
To support more than 4,500 flights daily, United set out to convert a 218,000-square-foot warehouse in Newark, New Jersey, into a state-of-the-art commercial kitchen. The project required speed, precision and strict food safety standards while keeping catering operations running without interruption.
Haskell designed a catering hub where safety, speed and scale work together.
To meet the highest food safety requirements, Haskell divided raw materials into high-, medium- and low-care zones, minimizing contamination risks and ensuring cleanliness at every stage. United’s menus and flight schedules were analyzed to engineer workstations and conveyors that maximize throughput while maintaining quality.
Innovative refrigeration and cleaning systems elevated safety and efficiency.
A custom-designed refrigeration system reduced cleaning times by 40% and supported a rigorous sanitation schedule, improving productivity and safety. The facility was also built with flexibility in mind, allowing for expansion as United’s catering needs evolve.
The project resulted in a modern, scalable facility to keep United ahead of demand.
Delivered on an aggressive timeline, the facility became fully operational without disrupting service. Today, it stands as a high-performance catering hub that enhances efficiency, safeguards food quality and positions United to meet growing demand well into the future.
